
I know, I know strawberry cheesecake baked oats doesn’t exactly scream summertime recipes. But I went through a real phase earlier this year trying to make cheesecake baked oats in as many ways as possible and thought this recipe would be perfect for this series. Last year I made strawberry cheesecake overnight oats and loved that recipe and wanted the theme to continue. But if baked oats in June/ July really aren’t your thing, check out that recipe instead.
A lot of baked oats recipes blend the oats first, I’m not a fan of this method. If you look at the final texture of those dishes and the ingredients list, you’re essentially making a gluten free cake for breakfast. Not that there’s anything wrong with that, but that’s not the texture that comes to mind for me when I think of baked oats. So, I prefer to leave my rolled oats whole when I’m making a recipe like this. But, if you really want to blend yours, feel free to do that before you begin with the following steps.

Nutritional Information
Each serving of this recipe contains 16.5g of protein and 9g of fibre. You’ll receive your full daily amount of vitamin C, half of your daily B12, 40% of your daily B2 and a quarter of your daily B1.
Substitutions
I used the Nush cream cheese for this recipe which is almond based, using another cream cheese with a different base such as coconut may yield slightly differtent results in terms of texture.
How to store and reheat
This is a single serving recipe and I wouldn’t recommend making this in advance and reheating it if you can avoid it. However, if you do have leftovers, reheat in the microwave for 90-120 seconds, depending on the strength of your microwave, to warm back through.
Keep leftovers refrigerated and covered for up to two days.

Vegan Strawberry Cheesecake Baked Oats Recipe
Sweet, creamy vegan strawberry cheesecake baked oats recipe with white chocolate chips and gooey baked strawberries.
This recipe is gluten free, dairy free and vegan. The dairy alternatives I used contain nuts and soy, but adapt as necessary for your own dietary requirements.

Vegan Strawberry Cheesecake Baked Oats Recipe
Ingredients
- 30 g vegan cream cheese
- 150 g strawberries
- 30 g strawberries chopped
- 1/3 cup strawberry soy milk
- 15 g vegan white chocolate
- 100 g vegan strawberry yoghurt
- ½ cup GF rolled oats
Instructions

Preheat oven to 180c

Blend your whole strawberries. Whisk or blend your strawberry yoghurt, strawberry milk and vegan cream cheese. Add your blended strawberries to your dairy alternative mix. Stir in your rolled oats, chopped strawberries and white chocolate chips.

Transfer to an oven friendly dish and bake for 20-25 minutes.
