
This is one of the easiest recipes you’ll ever come across. It’s great for students because it only requires one pan and a microwave and there’s no need to chop anything. This one also only takes 10-15 minutes to make and provides a couple of servings that you can reheat in a microwave, so it’s great for exam periods/ deadlines. As you can probably guess by the ‘spicy lentil & bean bowl’ part of the recipe, this one is also a great source of plant protein.
Suggestion: buy a few of these ingredients early in the term. This recipe contains no fresh ingredients. If you’re broke by the end of the year, a few batches of this will see you through your last week or so.

I’ve served this dish a few ways, alone, with some rice and as a side. Eaten alone, it comfortably serves 2-3 and will serve 4 with rice. For the sake of the nutritional information, I’m going to assume it’s serving two as a larger portion.
Exact nutritional values will vary depending on the brands of products you’re buying, but this recipe will provide somewhere in the region of 24g protein per serving, around 18g fibre. Around 80% of the RDA of vitamin B1, nearly half of the RDA of vitamin c and about a quarter of the recommended amount of iron.

Spicy Lentil & Bean Bowl Recipe
Ingredients
- 1 tin chopped tomatoes
- 1 tin of mixed taco beans/ mixed beans in spicy tomato sauce
- 1 packed microwavable lentils
- 1 tsp chilli powder optional
Instructions

Add the chopped tomatoes to a medium sized saucepan on low-medium heat. Allow to cook for 4-5 minutes, stirring occasionally.

Then add in the taco beans and cook for a further 4-5 minutes to warm through. Add the chilli powder now if using, I like to add a little extra seasoning to mine.

Meanwhile, microwave the lentils. When the lentils are ready, add them to the saucepan, stir to fully combine them.
Serve and enjoy!
