
As the name suggests, today’s recipe is a very easy bake with minimal ingredients. This cinnamon cookies recipe has a slight hint of cinnamon, just enough to taste it but not a huge amount to be overpowering for those who aren’t that keen. You can easily add more to your preference if you’d like a stronger cinnamon taste. Likewise, remove the cinnamon if you’d like a plain oat cookie recipe.

Obviously, a cookie recipe doesn’t have an awful lot going from it on the nutrition front, but die to the oat base, they are quite high in fibre (for a cookie). They contain around 2.3g each (per 12th of a recipe), which is 10% of the RDA.
Simple Cinnamon Cookies Recipe
This cinnamon cookie recipe is a really easy bake, with a slight cinnamon flavour. It would be a great one to bake with kids too!
I opted to use rolled oats and oat flour for this recipe to add a little bit more texture, but you could use all of one or the other for a smoother cookie or crunchier biscuit texture.
These cookies have a slight crunch on the outside, but a soft bake centre. Cook for an extra 5 minutes if you’d prefer a fully crunchy cookie!


Simple Cinnamon Cookies Recipe
Ingredients
- ¼ cup vegan margarine 50 g
- ½ cup non-dairy milk 120 ml
- 2 tablespoons sunflower oil
- 2 cups oat flour
- ½ cup caster sugar
- ½ cup rolled oats
- 1 teaspoon baking powder
- ½ tbsp cinnamon
- ½ teaspoon salt
Instructions

Preheat oven to 175°C and line a baking tray with greaseproof paper.

Gently melt the butter over a low-medium heat. Add milk and 2 tablespoons of sunflower oil and mix together.

Once combined, take off the heat and set aside to cool slightly.

In a separate bowl, combine the flour, sugar, baking powder and salt with a fork. Then stir in the rolled oats and cinnamon.

Make a well in the centre and pour in the butter mixture. Combine gradually until a thick dough forms. You may not need all of it, I used around 80%

Using your hands, roll dough into 10-12 little balls and flatten into cookie shapes. Place on the lined baking tray then cook for 15 minutes, until firm around the edges but still slightly soft in the centre.

Once cooked, allow to cool before serving
Serve and enjoy!

This is such an easy peasy looking recipe, even for a disastrous baker like me, I’m sure the cookies would turn out half decent. If it was me, I would try adding coconut into the mix actually 🙂

Mmm these look really great! I’ve never really been a fan of cinnamon but I do quite like it in small doses because it can be slightly overpowering! I’ve baked cakes in the past but I haven’t tried cookies so I may have to now! X

I’d add as much cinnamon as possible. I am so weak for it, it compliments so many things! It really does make me sad that you don’t like bananas as spiced banana bread is a bake I could eat in one sitting. Appallingly, I’m not actually sure if I’ve tried cinnamon cookies yet… Great excuse to try this recipe!

Tis the season! I ate a similar cookie with a cup of warm pumpkin spice bengal tea. A lovely combination; I am all for cinnamon in the fall weather for it gives a nice snap and crackle.
