

A baked potato with beans is a classic, right? But what if we mix that up a little? This Mexican stuffed sweet potatoes recipe is full of vitamins and minerals, has everything you love about a traditional baked potato with heaps more flavour. Â
The best part about this recipe? After your potatoes are in the oven, you only need to spare about 5 minutes to prep everything else so it’s a really low maintenance easy dinner or lunch recipe. The guacamole provides you with some healthy fats, the beans obviously add some protein and you’ve got a great source of carbohydrates from the sweet potato to create a really simple yet balanced meal. Â
I used my guacamole recipe from my homemade tortilla chips in this recipe to keep things simple. The guacamole is fresh and zesty, which provides the perfect flavour balance between the smoky beans and the spice of the hot sauce or salsa. Â

Nutritional Information Â
This recipe is loaded with fibre, proving the full RDA of 25g. It’s also relatively high in protein for a recipe with only one clear protein source, coming in at 18g a serving. There’s 11g of fat per serving, most of which comes from the avocado. Â
Each serving provides over 100% of your daily vitamin A and C requirements as both sweet potatoes and kale are high in those two vitamins. It also contains over a third of the calcium RDA and just under a third of the RDA of iron. In terms of vitamins, it contains at least 25% of vitamins B1, B2, B3, B5, and B6.Â

This recipe is dairy free, gluten free, soy free, nut free and vegan. Â

Mexican Stuffed Sweet Potatoes Recipe
Ingredients
- 2 large sweet potatoes
Beans
- 1 can black beans drained and rinsed
- 1 tsp smoked paprika
- ½ tsp cumin
Guacamole
- ½ small red onion chopped
- 1 small ripe avocado
- 1 lime juiced
- 1 fresh chilli
- 1 tsp chilli oil
To serve
- 1 tbsp mixed seeds optional
- 60 g kale or other salad base
- Hot sauce or salsa to serve
Instructions

Preheat oven to 180°c, slice your potatoes in half and spray the inside of each with a couple of sprays of fry spray. Place them on the baking tray, skin facing up. Lightly stab the skin a few times with a fork, then place in the centre of the oven for approximately 45 minutes. This will vary depending on the size of your potatoes, so check them a few times to see how long they’re taking to soften.

About 5 minutes before the sweet potatoes need to be removed from the oven, add the beans and spices to a small saucepan on a low heat and warm them through, stirring occasionally.

While the beans are cooking, prep the guacamole. Scoop out the avocado and remove the stone. Mash with a fork until reasonably smooth. Stir in the chopped onion and chilli. Add the juice from 1 lime and the oil, then season to taste with sea salt, black pepper.

Add the kale to two plates or bowls. Once the sweet potatoes are ready place one in each bowl, add the guacamole, lightly mashing it into the sweet potato, then pour the beans over. Add salsa or hot sauce to serve.
