
I know that bean casserole dishes are a little bit dull. They’re easy to make and everyone roughly knows how to throw a dish like this together. But, dishes like this are also a great way to boost your protein intake because you can throw just about any bean/ lentil you want in there.
This dish is mainly focused on the herbs and contains very little spice, just a little hint of something to give it a tiny kick. My grandmother, who thinks black pepper is exotic seasoning, still enjoyed this dish. If you have taste buds like mine (everything has to be spicy), you’ll need to add some extra chilli.

Back to what I was saying about the easy to get your protein in, you get 10-20g per serving from this dish depending on whether you eat it alone or with some sides. Even a smaller portion served with sides provides you with 9g of fibre and over 100% of your RDA for vitamins C and A. A quarter of this dish also provides just over 20% of your RDA of iron too.
This one is so easy to adapt in terms of beans/ vegetables too. Not a fan of cannellini beans? Add some chickpeas instead. Want green lentils instead? Try it. Not a carrot fan? Add some squash, or another vegetable of your choosing instead.
I like the fact that these dishes are always good no matter how long you leave them. Add a splash of water every now and then and leave it on a low simmer and it won’t matter whether you cook it for 30 minutes or 90. Perfect for casual gatherings or meal prep.
Italian Lentil & Bean Casserole

Italian Lentil & Bean Casserole
A hearty vegetable and bean casserole for the whole family to enjoy. Easy to serve family style or on a buffet table.
Ingredients
- 1 tbsp olive oil
- 1 red onion chopped
- 2 medium carrots roughly chopped
- 2 red peppers roughly chopped
- ½ cup lentils
- 1 can cannellini beans drained and rinsed
- 1 tin tomatoes
- 1 tbsp mixed Italian herbs
- ½ tsp chilli powder
- ½ tsp dried rosemary
- Black pepper to taste
Instructions

Heat a large heavy based pan on a medium heat then add the olive oil and onion. Cook for 5 minutes until onions are turning transparent, add the dried herbs, black pepper and chilli and cook for a further minute.

Add the carrots and peppers and stir until the seasoning is evenly coating the vegetables.

Now add the chopped tomatoes and lentils. Fill the tomato can with water and add that too. Bring to the boil then reduce to a simmer and cook for 20-25 minutes, stirring occasionally.

Add the cannellini beans and return to medium heat for 5-7 minutes until beans are fully warmed through. If you wish to serve this later, reduce to a low simmer again and continue to stir occasionally, top up the water when necessary.
Serve and enjoy!
