
As I mentioned in yesterday’s post, today’s recipe is going to be an Indian rice recipe that can either be eaten alone or served as a side dish. This recipe is roughly based on a vegetable pilau, but traditional ones include cardamom and I’m not a huge fan so I’ve adapted it slightly.
This recipe takes a while but doesn’t involve much contact time, so it’s a great side to make if you have a few dishes on the go.
Nutritional Information
Around a quarter of this recipe doesn’t offer much in the way of nutritional value, but this is a vegetable rice recipe so it does offer a few vitamins. A quarter cup of brown rice provides you with just over 20% of your daily B1 and B3 and just under 20% of B6. Even a quarter of a carrot gives you your full daily recommended amount of vitamin A. A quarter of the full recipe provides 5g protein and just over 3g fibre. Although those figures aren’t astounding, that’s not too bad for a side dish…
Indian Rice Recipe
This recipe is dairy free, gluten free, soy free, nut free and vegan. Serves 2 as a main and 4 as a side.


Indian Rice Recipe
This Indian rice recipe is my twist on a vegetable pilau, can be served as a side dish or a veggie main.
Ingredients
- ½ large red onion diced
- 1 large carrot very finely chopped
- 2 cloves garlic finely chopped
- 1 tbsp cumin
- 1 tbsp turmeric
- 1 tbsp olive oil
- 1 cup brown basmati rice
- 2 cups water
- ½ cup frozen peas
Instructions

Heat a large pan, which has a tight-fitting lid. Heat the oil in the pan. Add the onion and garlic and cook it over a medium heat for 2 mins. Then add the carrot and cook for a further 5 minutes, until the onion starts to soften.

Add the cumin and turmeric to the pan and cook for 1-2 mins.

Rinse the rice well and add to the pan, along with the boiling water and stir briefly to combine. Bring the mixture to the boil, cover the pan and cook over a low heat for 25 mins, until the water is absorbed. Stir in the frozen peas and cook uncovered for 4-5 minutes until the peas are cooked.

Remove from the heat. Leave the rice in the pan but off the heat for a few mins before serving.
Serve and enjoy!

I have never tried Indian Rice. I was thinking of Spanish Rice when I saw the picture. I like all the ingredients in the recipe for Indian Rice. I am going to try it and I am sure I will enjoy it.
