

At the beginning of the year, I posted something listing ingredients/ foods I’d like to cook/ eat more in 2021. Celeriac was one of them, and it seemed to stay with me because I went through a phase shortly after that where almost everything new that I was making had celeriac in it. It got to a point I had to start holding potential recipes back because I was using it a little too often, but one that had to stay was this celeriac mushroom burgers recipe.

If you’ve been reading this blog for a while, you’ll know that I don’t eat fake meat. As a result, a lot of burgers end up being lentil or bean based. This one, however, is mainly vegetables, with some added nuts, which is a change in taste and texture that I absolutely loved. I know a lot of meat eaters that really like veggie or vegan burgers, and I’m sure it’s something to do with the fact they’re more dynamic with the use of nuts/ seeds and grains, it often makes it more interesting for the palette.
Gluten Free Hamburger Buns
Something that isn’t so great for the palette? Gluten free bread. The hamburger buns featured in this post are by Schar. They’re not great, this was the first time I’d tried those ones and I don’t recommend. If you can get your hands on them, try the Fria ones, the texture is a lot nicer (by GF standards).
Something Seasonal?
There’s something about this mix that reminds me of a plant based Christmas recipe, I don’t know whether it’s the root vegetables alongside the rosemary and the nuts, but that combination just feels like Christmas prep to me. Maybe not the vibe I should be going for in May, but it’s a hearty and comforting dish nonetheless. And who doesn’t love Christmas food?

Nutritional Information
The following information is per patty, although each patty in this recipe is on the smaller side. My gluten free bun shown is on the smaller side so could only accommodate one, but I’d suggest using two for an average sized hamburger bun, which would contain double the following.
Each patty provides 2.8g of fibre, 41% of the RDA of vitamin K, 22% of the RDA of both vitamins B5 and B6, and 10% of your daily vitamin E.
Celeriac Mushroom Burgers Recipe

This recipe is gluten free, dairy free, soy free, nut free and vegan.

Celeriac Mushroom Burgers Recipe
Ingredients
- ½ celeriac peeled and chopped into small cubes
- 3 cloves garlic
- 1 TSP dried thyme
- Few sprays fry spray
- 150 g shiitake mushrooms
- ½ TSP rosemary
- 1 TSP olive oil
- 2 tbsp mixed seeds
- Pinch of salt
- Generous amount of black pepper
- 1/3 cup walnuts
Instructions

Preheat oven to 185c. Place celeriac on a baking tray and spray with a few sprays of fry spray, then cook for 20-25 minutes until it’s softened slightly but not fully cooked, or crisp around the edges.

Heat a large frying pan on low to medium heat. Once hot, add the shiitake mushrooms, part cooked celeriac and rosemary and cook for about 5 minutes until the mushrooms are slightly golden. Add the mixed seeds and cook for a further minute or two, then transfer all of the ingredients to a food processor. Add the nuts, then pulse until everything is evenly combined.

Once combined, split the mix into four evenly sized amounts, then shape into circle burger patties with your hands.

Line your baking tray with greaseproof paper and place the patties on the tray. Cook in the centre of the oven for 25-30 minutes until hot all the way through, firm on the outside but still moist in the middle.
Serve and enjoy!

I love your idea of a mushroom burger. I am a meat eater but when I go for non-meat food, I prefer them not to be intimidating meat. I am in the US so have no clue what celeriac even is . But I’ll definitely give this a try once I figure everything out. All the best!
