
For this week’s high calcium vegan recipe, we have an almond and orange overnight breakfast pot recipe. I wanted to include something like this because the fortified non-dairy milks and yoghurts are a really easy way to add in some extra calcium, especially combined with the other ingredients in this one.
This recipe takes about 2 minutes to mix, needs roughly 10 minutes to set at room temperature before putting together then can be left in the fridge overnight for breakfast the next morning. I know at the point you’re reading this the majority of us in the UK aren’t really going anywhere, but it would be a great grab and go breakfast option under normal circumstances. Or a good healthy breakfast option for kids before school so no prep is required during a busy morning.
Calcium Sources
Almost every ingredient in this recipe is a calcium source. I used fortified milk and yoghurt options to add some extra, but both chia seeds and almonds are plant based sources of calcium too. In total this recipe contains 429mg of calcium, which is 61% of the RDA.
- Almonds – 54mg
- Chia Seeds – 126mg
- Non-dairy milk – 120mg
- Non-dairy yoghurt – 120mg
Nutritional Information
Other than the high amounts of calcium, this recipe contains 12g of fibre and16.5g of protein. In terms of vitamins and minerals, this recipe is a source of several B vitamins, vitamin E, iron, selenium and contains the full recommended daily amount of vitamin K.
- Vitamin K – 142 (158% RDA)
- Iron – 4.1 mg. Read more about iron requirements.
- Vitamin E – 5.2 mg (35% RDA)
- Selenium – 12 (22% RDA)
- B6 – 0.33mg (24% RDA)
The majority of the B vitamins in this recipe come from the fortified dairy alternatives. The ones I used provided B2 and B12, but the amounts will vary depending on your chosen brands.
Almond & Orange Overnight Breakfast Pot
A healthy overnight breakfast recipe, high in calcium and a source of plant based omega 3.
This recipe is gluten free, dairy free and vegan. It can be soy free depending on non-dairy alternatives used, and it does contain nuts.

Almond & Orange Overnight Breakfast Pot
Ingredients
Bottom Layer
- 100 g thick vegan yoghurt see notes
- 20 g almonds flaked or roughly chopped
Orange Chia Layer
- 100 ml fortified non-dairy milk
- 2 tbsp chia seeds
- 1 tsp candied orange peel
- ½ tsp orange extract
- Few drops of orange food colouring
Toppings
- Some chopped nuts granola or seeds (optional)
Instructions

In a separate bowl, add all of the ingredients from the chia layer section and stir to combine. Add a few drops of the food colouring to reach your desired shade of orange (feel free to skip this part). Leave to start to set while you prep the other layers of the jar.

Take roughly 100g of thick vegan yoghurt, or enough to cover the base of your pot/ jar/ tub and spread it evenly across the base.

Add the layer of chopped/ flaked almonds.

Once the chia layer has started to thicken (about 10 minutes), pour that over the top. Ideally it wants to have had time to slightly thicken to help prevent the layers bleeding into one another, but it can be poured straight into the jar to set if you’re in a hurry.

Leave in the fridge for at least 4 hours or overnight before eating.

Add some of the optional extras for some added crunch before serving
Serve and enjoy!
Recipe Notes
For the thick yoghurt, I used Alpro Greek Style, but you could opt for any other Greek alternative or coconut yoghurt which is naturally thicker.

I love being able to prep breakfast beforehand because I know I want something filling that will set me up for the day but I’m really bad when it comes to it in the morning actually being bothered to do it and not just grabbing the closest cereal. I’ve never had anything with an orange flavour to it though, so this sounds really good.

I’m not a fan of orange so this one may not be one for me, but I love having something ready made for me to eat in the morning before starting work, especially as I’m quite lazy and I try and get up as late as possible before I have to start work. Might have to share this recipe with my boyfriend as I know he’d probably like this one. x

I always love overnight recipes when it comes to breakfast, as you can do all the leg work the night before and breakfast is just waiting for you when you get up and get moving in the morning. I do overnight oats a lot, but I’ll have to give this a try and change things up a bit.
