Almond & Orange Overnight Breakfast Pot

A healthy overnight breakfast recipe, high in calcium and a source of plant based omega 3.

Ingredients

Bottom Layer

  • 100 g thick vegan yoghurt see notes
  • 20 g almonds flaked or roughly chopped

Orange Chia Layer

  • 100 ml fortified non-dairy milk
  • 2 tbsp chia seeds
  • 1 tsp candied orange peel
  • ½ tsp orange extract
  • Few drops of orange food colouring

Toppings

  • Some chopped nuts granola or seeds (optional)

Instructions

  1. In a separate bowl, add all of the ingredients from the chia layer section and stir to combine. Add a few drops of the food colouring to reach your desired shade of orange (feel free to skip this part). Leave to start to set while you prep the other layers of the jar.
  2. Take roughly 100g of thick vegan yoghurt, or enough to cover the base of your pot/ jar/ tub and spread it evenly across the base.
  3. Add the layer of chopped/ flaked almonds.
  4. Once the chia layer has started to thicken (about 10 minutes), pour that over the top. Ideally it wants to have had time to slightly thicken to help prevent the layers bleeding into one another, but it can be poured straight into the jar to set if you’re in a hurry.
  5. Leave in the fridge for at least 4 hours or overnight before eating.
  6. Add some of the optional extras for some added crunch before serving

Recipe Notes

For the thick yoghurt, I used Alpro Greek Style, but you could opt for any other Greek alternative or coconut yoghurt which is naturally thicker.
