
Welcome back to episode 2 of me finding the best gluten free bread recipe. Or at least trying to. If you didn’t catch part 1, last month I decided I would be trying lots of gluten free bread recipes out and kind of reviewing each one to see if I can find a gluten free bread recipe that tastes like the real thing. If not, hopefully get a few ideas along the way and maybe make my own. Anyway, I’m back with part 2 and this month I’m trying this quinoa bread recipe from Rhian’s Recipes.

How this works
I didn’t go into too much detail about this last time, so I think I should probably explain how I’m doing this. As and when I find bread recipes to try, either through a Google search or on Pinterest, I’m adding them all to a folder. Then, each month I’m choosing one or two at random to make. I’m not reading the recipes beforehand other than a quick check of the ingredients I need and the prep time.
So, I’m making each recipe with fresh eyes, and the loaf you see in the photos is always the first one, following the recipe exactly as it goes. I cheated last month because I thought one ingredient change could change the outcome of the loaf, but you get the idea.
Initial thoughts
When I got up to make this one, I was quite shocked. The ingredients list was very simple, and it was a no knead recipe. There’s no bread flour in this one; instead, it’s equal parts oat flour and quinoa. I was slightly worried about the quinoa as quinoa flour often has quite a strong earthy taste, which isn’t necessarily bad (depending on your preferences) but it doesn’t exactly make a traditional tasting bread either.
Making the bread
I’m not sure if we can really call this a ‘bread’ in the way I was thinking. As soon as I started reading the instructions, I realised this one is a no knead bread because it’s prepped like a batter, as you would for something like a banana bread, rather than a regular bread. This is fine, but I had some concerns about the texture ending up a little bit too cakey.

Gluten Free Bread Recipe
I’m not going to share her full recipe, so for detailed instructions check out the original post, but this is a brief overview.
- 200g oats, blended into a flour
- 200g quinoa, blended into a flour
- 2 tsp baking powder
- ¼ tsp salt
- ¼ tsp bicarbonate of soda
- 1 tbsp apple cider vinegar
- 350ml water
Then essentially add dry ingredients to bowl, mix in the wet and transfer to your loaf tin and bake.
The finished product
The wait for this to cool so I could slice it felt like an absolute eternity. But I knew it was more likely to be a flop if I tried to slice it too soon. So, I paced around my kitchen checking its temperature every 30 seconds instead…(not really, maybe. Kind of. Okay it was more like every 2-3 minutes)
I wanted to be so wrong about this. But I wasn’t. I don’t know how I feel about this one. The texture is more on the cakey side. It has a hint of earthy taste from the quinoa but it’s not too overpowering. Obviously, this isn’t sweet like a banana bread or other dessert loaf would be, but it also isn’t a typical bread you’d pop in the toaster. Her original recipe talks about toasting it. Personally, I don’t think that would work well. Even though I waited for it to cool, I found that this one had to be sliced quite thick for it to not fall apart too. I’m not even sure if the slices would fit in my toaster…

Final rating
Overall, it does taste nice. I added some nut butter and it made a really nice snack. But I wouldn’t be serving this up as toast for breakfast, which is making it quite hard to rate it. On the basis I liked it, but not for the purpose I intended or as it was suggested in the original, I’m giving this a 6. that’s only because I still liked the end product. If I were to rate this as a loaf purchased in a shop with the regular bead, that would be lower.

I really do like the look of this bread, as you said, it’s quite a simple recipe for bread, usually bread needs a lot of ingredients and a good kneading process! x

That does look nice, though definitely has a look of the cake about it.
What a shame that it didn’t turn out 100% how you wanted. I guess you could use this as a base for a sweeter bread in the future? I bet it tastes lovely with a bit of sweet jam on it!

I haven’t tried a lot of gluten free bread recipes myself but yes, that is more cakey than it ought to be for bread, unless it was intended to be more like a cake loaf but without the sugar. I’m actually afraid to try baking bread LOL so I am highly invested in this series now that I have stumbled on it.

oo this is a weird one. like it looks delicious, but definitely not the consistency of bread. also, weird question, do you ever use a slow cooker? our oven has broken and we’re having to use our slow cooker, so I’m hunting for new recipes! xx

Bread has been one of my major loves for as long as I can remember! Unfortunately I’m having to stop eating it (even GF ones) for other reasons! Your loaf looks incredible though!

I love homemade bread. I haven’t tried homemade bread made with a tablespoon of apple cider vinegar but I bet it gives it a very nice flavor
Bread is definitely a weakness of mine and I could eat bread everyday! I haven’t tried many gluten free breads but the ones I have tired have actually be quite tasty. This sounds like a great recipe! X
This sounds pretty interesting! I don’t think I’ve heard of using quinoa for a bread recipe before, it does look more like a banana bread to be fair, although I would be interested to try it out. It looks pretty tasty!

This was so interesting for me to read! I’ve never made bread before, but I’ve been around as my roommate has. It seems to take a lot of effort, but the results always pay off. I’ll have to try this out for my first bread bake!
I have never heard of loaf quite like this before, but it does remind me more of a dessert loaf from the shape down to the thick slices. I suppose I will have to keep my eyes peeled for Episode 3 of this as you continue the hunt!
My first thought upon reading that it contained quinoa was right in line with your own. There is such a distinctive taste assocaited with quinoa and while I’m sure there are recipes that do a good job of covering that up, it usually breaks through. I am really enjoying your quest to find the best gluten free bread and will continue following it! After all, I’m excited to hear the final outcome…
Interesting recipe – it doesn’t seem to look like regular bread and I honestly thought it was banana bread! Also, a no-knead recipe seems to be up my alley since making bread actually gives me so much anxiety, lol xD Thanks for sharing!

I don’t think I’ve ever tried gluten-free bread, but today I found some gluten free baked pea crisps and they are amazing (and lower calories than normal crisps).
The loaf does look amazing though, even if it’s more cake-y than bread-y

I love the idea of using quinoa in a bread to be honest but I can see what you mean about texture. It sounds like the taste made up for it though!

This loaf looks delicious even though it looks more like a cake.
It definitely looks nice from the outside but it seems like this is a bit of a “no mans land” bread if it can’t be toasted, can’t be used for breakfast and doesn’t taste like a dessert loaf!

I never thought we could make bread without kneading the flour. But yes we do make banana bread with a batter hehehe. Even though you rate it at 6 the bread really looks delicious. 🙂 I have not yet tried making gluten free bread. 🙂
