
Back when I made my cauliflower dippers in May, I used lentil flour for the first time in a recipe. That got me thinking about the potential of using it to add some extra protein to future recipes. Back then, I was in the middle of Recipe A Day May prep and put the idea to one side, a few weeks ago I decided to try and make these curried lentil burgers. This recipe consists of something a little bit like a lentil daal recipe, some vegetables and some lentil flour, so it’s a vitamin rich dish, with a healthy boost of natural plant protein too.
This recipe bakes in an oven for 25 minutes, or pan fried in 8-10 minutes depending on your preferences. Prep is only around 15 minutes, so this recipe can be made in 30 minutes or less if you opt to fry it. Alternatively, you could prep the patties in advance and keep in the fridge for 3-4 days before cooking.
Nutritional Information
This recipe serves 4 burgers, and there’s approximately 20g of protein and 10g of fibre per burger, and only 2g of fat. I used high vitamin D chestnut mushrooms, which provide you with around 40% of the recommended RDA of vitamin D per serving. Lentils are high in a range of B vitamins, but this recipe is highest in B1, with over a third of the RDA per serving. This recipe is also high in vitamin A.
Serving Suggestions
I kept mine simple, a gluten free pitta with a little salad and chutney. However, when I made mine, I had a tiny bit of mixture left at the end and decided to roll it into a meatball shape and put it in the oven with the burgers. The results can be seen below – they worked; crisp on the outside and still moist (I’m sorry for using that word) in the middle. You could serve them as a ‘meatball’ with some salad or in a buddha bowl.

Curried Lentil Burgers Recipe
These curried lentil burgers are a quick and easy dinner recipe for the whole family to enjoy. This recipe is gluten free, dairy free, soy free, nut free and vegan. These patties are only mildly spiced, so adapt as necessary if you prefer more of a kick.

Curried Lentil Burgers
Ingredients
Step 1
- ½ cup red lentils
- 1 tsp chilli powder
- 1 tbsp turmeric
- 1 ½ cups vegetable stock
Step 2
- 100 g chestnut mushrooms
- 1 medium carrot
- 3 cloves garlic
- 1 tbsp turmeric
- ½ tsp garam massala
Step 3
- 1 cup lentil flour
Instructions

Preheat oven to 190°C.

Take the step 1 ingredients and add the lentils to a small saucepan on a low heat for a minute, stirring a few times. Add the chilli powder, turmeric and vegetable stock, bring to the boil on a medium heat. Reduce the heat and leave to simmer for 10-15 minutes until the lentils are partially cooked and the liquid has almost fully evaporated. You don’t want the lentils to be fully cooked/ soft like a daal, more like half the way there.

While the lentils are cooking, take the ingredients from step 2 and add the garlic to a frying pan on medium heat. Cook for one minute, stir in the spices then add the remaining vegetables and cook for a further 4-5 minutes.

When lentils and vegetables are cooked, add both to a food processor along with the lentil flour and pulse a few times until the mixture is combined. The bulk of the mixture should be smooth but the vegetables should still have a little bit of texture.

Shape into four patties (or the meatball alternativand either place on a baking tray in the centre of the oven for 25 minutes. If you want to fry them, add a non-stick pan to medium heat. When the pan has heated up, cook for 4-5 minutes on each side.
