I feel a little bad calling these cookies a recipe; that’s how simple they are. There was a bunch of ripe bananas in my house that no one was going to eat and I was set the task of making something. Just for the record I do not like bananas. I do however like chocolate, oats and cookies. I decided to make cookies from them as they would be quick and simple, and there would be a slight chance of me liking the product that came out of the oven.
Spoiler: I didn’t actually hate them despite the underlying banana taste.
You can make these as simple as you like, or add as much as your sweet tooth desires. The base for this recipe required a mere two ingredients. The version I’m making today uses four.

The best part about these cookies is that they are naturally sweet so totally healthy*. They’re a great guilt free snack and would be perfect to make with kids.
*Healthy without the chocolate, but even then a small amount of dark chocolate isn’t necessarily bad for you…
These cookies are gluten free, dairy free, vegan, soy free and nut free. They also contain no added sugars.
Prep time: 5 minutes
Bake time: 10 minutes
Serves approximately 10 cookies
Ingredients:
• Two cups of oats
• Two medium to large bananas
• Approximately 40g chocolate chips/ chunks
• 1tsp vanilla extract
Method:
1. Preheat your oven to 180 degrees and line a baking tray with greaseproof paper.
2. Pour oats and bananas into a blender or food processor and leave to combine until the oats have broken down but still have a slightly coarse texture.
3. Once combined stir in the chocolate and vanilla.
4. Take a spoon and drop the cookies on the baking tray. The mixture will be very wet, this is normal. As the mixture is so wet it’s much easier to do this step with a spoon rather than by hand.
5. Place tray in the oven and bake for 9-12 minutes, or until the outside of the cookies are firm.
6. Once cooked leave to cool for 10 minutes.

And that’s it! I told you they couldn’t be more simple.
Enjoy!

I’m not a fan of bananas myself either, but cookies are so yummy and these look delicious! Will definitely have to try this out in the future, but probably without the bananas haha.

The more chocolate = the less it tastes of banana so that’s definitely a winning strategy! x

*Unpopular opinion time* – I might even add sultanas to mine!

Not crazy about sultanas but I’m a big fan of oatmeal raisin cookies! I just used regular rolled oats but it doesn’t really matter x
