
If you read my ‘what’s in season in spring‘ post, you might be confused by this one. I said I don’t like rhubarb and wouldn’t be including it in a strictly seasonal for spring. Well, here you are reading a rhubarb crumble recipe. I’m not sure what to say, I don’t know how I ended up adding this to the list. Not only do I not like rhubarb, I also don’t like crumble. Don’t judge, I’m more of a pie person. I don’t know how this happened, but you know what? I didn’t actually hate it. And my mum, who likes both rhubarb and crumble, loved this.
Crumble is such an easy dessert and such a classic that *most* people love. It involves minimal prep and is a fairly quick bake so anyone should be able to make this!

Seasonal Ingredients
As you probably gathered from the introduction, rhubarb is the main seasonal ingredient. When I decided to add the apples, I realised I wasn’t actually sure when apples are in season. It turns out that’s a complicated answer. Apples are in season all year; different varieties of apple are only in season a couple of months at a time. As it happened, I had Braeburns in my kitchen and they’re in season right now. I love an accidentally seasonal ingredient.
Also, can we take a moment to appreciate the fact I could have 100% pretended this was planned and chose not to?
Nutritional Information
Rhubarb is a vegetable, as it’s often seen as a dessert food, I’m not sure how many people are aware of that. That fact becomes very clear when you look at the nutritional value of it though, it’s much lower in sugar than most fruit, containing just 1.1g per 100g. The lack of sugar also makes it a lower calorie food, having just 21 per 100g. Apples and rhubarb are both high in vitamin C and fibre.
This recipe is dairy free, gluten free, soy free, nut free and vegan.

Gluten Free Vegan Rhubarb & Apple Crumble Recipe
Ingredients
For the filling
- 350 g rhubarb chopped into chunks the length of your thumb
- 150 g apple peeled and chopped
- 100 g golden caster sugar
For the crumble
- 140 g GF self-raising flour I used Dove’s Farm
- 85 g non-dairy butter chilled
- 50 g golden caster sugar
Instructions

Tip rhubarb and apple chuks into a saucepan with 100g golden caster sugar. Cover and simmer on a very low heat for 15 mins. When soft (but still holding its shape) and sweet enough, pour the rhubarb into a medium baking dish.

Heat oven to 200C/180C fan

To make the topping, rub the self-raising flour and butter together with your fingers until you have a soft, crumbly topping. Then add the sugar and continue mixing together with your hands.

Scatter the topping over the rhubarb and bake for 30 mins or until golden brown on top. If you’re using a smaller dish and have a thicker crumble topping, remove from the oven after 15 minutes. Lightly scrape the top with a fork to keep the crumbly texture and place back in the oven for the remaining 15 minutes.
Serve and enjoy!

I love the idea of eating seasonally (I even have a spreadsheet saved of what’s in each month – sad I know!) but if I’m in a rush at the shops I just grab anything – I definitely need to be more conscious of it!

Lovely crumble, I’ve made it last night! Added some berries to the fruit mix and a teaspoon of cinnamon to the crumble mix. Delish! Family enjoyed with some ice cream! Just wish I could add a picture how lovely it came out!
I like the of adding the apples to the GF Vegan Rhubarb Crumble Recipe. I have never tried a rhubarb crumble. I am not sure I know what to expect flavorwise.

I’m definitely more of a pie person too but this looks delicious! Crumble always looks so inviting to me but I’ve never really tasted rhubarb before, although I’ve heard of other desserts that include it in the ingredients. I might give it a go one day x
I’m definitely more of a pie person than a crumble person however I grew up eating rhubarb crumble. I haven’t ever actually made one myself but it’s a lot easier than I thought it would be. I think I’ll be trying this out in the next few weeks!

Honestly don’t know if I’m more pie or crumble myself :’) I like the texture of crumble and everything, but I looooove a good pie crust. It’s a struggle honestly haha

I think I might be more of a crumble person but I have more pie.. I’m not sure if that’s weird haha. I love rhubarb crumble though, I haven’t had it in a loong time though! I feel like I’ve always thought rhubarb was a fruit, but it’s good to know that it’s quite low in sugar. This recipe looks delicious though, I need to eat rhubarb again at some point.
