
I love breakfast foods, they’re my absolute favourite. But I find breakfast in the colder months a bit of a struggle. I love smoothie bowls and fruit, yoghurt etc but when it gets colder none of that sounds appealing, especially first thing in the morning when you’ve just left the cosiness of your bed. When it comes to warmer options, my weekend go to is pancakes but they aren’t exactly practical when you’re in a rush. I’m not really a fan of oats and toast is a little boring so I created these microwave friendly muffins.
Super simple, throw all the ingredients in a microwave friendly dish and 90 seconds later you have breakfast on the go. Or you can make a batch of these in the oven if you have the self-control to make them last; I do not.
Prep time less than 5 minutes.
All of these recipes serve one, take 17-20 minutes in the oven at 170°c and can be microwaved in 90 seconds.
Blueberry and Almond Breakfast Muffins
Ingredients:
- 2tbsp flour, I used GF oat (you can use pretty much whatever you want for this; oat, spelt, buckwheat, whole wheat and plain will all work).
- 1tbsp almond meal
- 2tbsp milk (I used sweetened almond)
- 1tbsp sunflower oil
- 0.5 tbsp maple syrup
- 0.5 tsp baking powder
- 0.5 tsp almond extract
- 0.5 tsp vanilla extract (optional)
- 2tbsp blueberries (fresh or frozen)
Method
- Mix all of the dry ingredients in a microwave friendly dish.
- Add the wet ingredients.
- Stir in the blueberries.
- Combine everything but be careful not to overmix.
- If cooking in the oven, line an oven friendly dish and spoon mixture in.

Peanut Butter Choc Chip Muffins
Ingredients:
- 3tbsp flour, I used GF oat (you can use pretty much whatever you want for this; oat, spelt, buckwheat, whole wheat and plain will all work).
- 2tbsp milk (I used sweetened almond)
- 1tbsp sunflower oil
- o.5tbsp peanut butter
- 0.5 tbsp maple syrup
- 0.5 tsp baking powder
- 10g chocolate chips
- 0.5 tsp vanilla extract (optional)
Method:
- Mix all of the dry ingredients in a microwave friendly dish.
- Add the wet ingredients.
- Stir in the choc chips.
- Combine everything but be careful not to overmix.
- If cooking in the oven, line an oven friendly dish and spoon mixture in.

This is a microwaved version. They don’t look as picturesque but are convenient and delicious!
Cranberry and Pomegranate Muffins:
- 3tbsp flour, I used GF oat (you can use pretty much whatever you want for this; oat, spelt, buckwheat, whole wheat and plain will all work).
- 2tbsp milk (I used sweetened almond)
- 1tbsp sunflower oil
- 0.5 tbsp maple syrup
- 0.5 tsp baking powder
- 0.5 tsp vanilla extract (optional)
- 1tbsp cranberries
- 1tbsp pomegranate jewels
Method:
- Mix all of the dry ingredients in a microwave friendly dish.
- Add the wet ingredients.
- Stir in the fruit.
- Combine everything but be careful not to overmix.
- If cooking in the oven, line an oven friendly dish and spoon mixture in.
