
Still working from home and find yourself grabbing something as fast as you can before you get back to your desk? Or running around after kids and need something that isn’t going to take too long? Whether there’s a particular reason for the time constraint or not, most people like quick options, especially in the middle of the day. And these 5 healthy 10 minute lunch ideas are cooked from fresh, other than one small cheat. Quick doesn’t have to mean unhealthy convenience foods.
For this, I tried to combine hot and cold meals. I know we’re still in summer now but September will be here before we know it. There’s also a combination of meals you can slowly graze on as well as a proper sit down meals – I tried to factor in something for everyone.
5 healthy 10 minute lunch Ideas
Pasta
Lentil or pea pasta cooks in about 7-8 minutes, and contains 20-25g of protein per serving, so it’s a great base for any quick meal. You can take the 7-8 minutes cooking time to whip up some vegetables or a salad to serve with it, or make some pesto (oil free if you’re trying to keep it lower fat). This one isn’t as brimming with micronutrients as some of the others, but it’s still reasonably healthy and balanced. As well as filling.

Edamame Grain Bowl
One pan, 5 minutes. This is simply some wok fried edamame in a tiny bit of fry spray, with some chilli flakes. Add some buckwheat and seeds when the edamame is nearly ready to lightly toast them, toss with a tbsp of tamari or soy sauce when it’s ready, then add to a bed of kale or spinach and throw a few olives in there. So easy to make and next to no clean up.

Nibble Plate
This is one for those of you who don’t really like heavy meals during the day and prefer something to pick at. I’ve included veggie sticks, some hummus, a gluten free roll, some grapes and some leftover falafels here. But you could switch those out for some nuts, replace the breads for rice cakes or crackers and build the plate however you’d like it depending on your personal preferences.

Gosh Veggie Bites Salad
I’ve spoken about the bits from Gosh before, but they’re amazing – and so easy! This salad features their Tuscan bites, which are potato and butternut squash based. They can be cooked in 8 minutes in the oven, 90 seconds in the microwave, or eaten straight from the pack so this is a great option for anyone really short on time. Or for those who don’t want to do any cooking at all.

Stir Fry
This one can be made as big or small as you’d like, and can’t get much easier to make. If you opt for a stir fry pack, there’s no chopping involved and most of them are ready in about 8/9 minutes. Serve with either rice noodles or my favourite black bean noodles as both cook in less than 5 minutes. This option is obviously a great way to boost your vegetable intake and build up your micronutrients in a very easy way.

I love stirfry as a quick lunch solution. You can easily change it up with different veggies or sauce options. If I know that I have time to actually sit down and enjoy lunch (rather than eating on the go), it’s my go to choice. I can’t remember the last time that I had a grain bowl. You may have just inspired today’s lunch choices… lol

I love nibble plates with fresh fruit, and have found that pasta salad is as experimental as stir-fry; I love trying new combinations.
Great ideas! I love humus and carrot sticks (or crisps if I’m naughty!).
Honestly I would choose paste over and over again. It never disappoints.

I am all about how fast and simple I can make food, so I can eat it, so this is right up my alley, and my favorite is pasta, and while none of them are what I would normally eat they all have an element that seems similar to what I already do.
Stir fry & salad are great go-to’s every time I get back into the swing of school! There are so many ways to switch it up and keep it interesting whilst also doing so in an efficient manner. Nibble plates are such a great idea; I think I definitely need to start making some this upcoming semester–especially since I’ll be at home alllll the time lol xx

Hi Sophie. Some delicious ideas there. The stir fry looks excellent – I suppose you can use pretty much any veg you have leftover in the fridge at the end of the week, to help avoid waste.
Oooh! Sometimes, we don’t have all of the time to make lunch. I love how the pasta takes such a short time to cook. I need to look into lentil pasta. I LOVE eating edamame. Like that you can incorporate it into a grain bowl. I am all about the nibble plate too! The stir fry looks great too. Nothing wrong with tossing everything into the pan. I have a nibble plate more or less every single day for lunch because I love all the different flavours and I love having different options of things to eat. Although mine are far from Vegan. Stir fry is always a good option too! I definitely need to get more creative with my lunches!

Love these quick lunch ideas. I am guilty of just grabbing something quickly and going back to my desk at the moment.
