
Strawberries + cream = this strawberry ice cream recipe. Regular readers will know that I can’t eat coconut, anyone who can’t have dairy will know this is problematic when it comes to desserts. I’ve made a vegan ice cream recipe before, and that one used nut butter as the coconut replacement to give that thicker, creamy texture we all want from ice cream.

The issue with that?
Well, that’s quite simple. You’re constantly fighting that nut butter flavour. It’s a lot harder to make your desired flavour shine through. And although the hint of nut butter doesn’t taste bad, it doesn’t quite fit the brief perfectly.
So, I’ve been looking for something fatty and creamy that will work in the same way as coconut milk/ cream would in a regular vegan ice cream recipe. And it all fell into place when I was making a smoothie one morning.
I use avocados in my smoothies to make them creamy, because they give a great texture and don’t taste of anything when mixed with something fruity or chocolatey etc. Creamy and tasteless? Exactly what I was looking for here.
I know that using an avocado in an ice cream recipe might feel like you’re doing something wrong, or making some weird health food that will taste awful. I promise that neither of these things are true. The avocado combined with the vegan cream is completely neutral, ready to take on the flavours of the strawberries. And between the cream, strawberries and jam, there’s more than enough added sweetness to remove any trace of avocado taste.

Nutritional Information
This recipe makes a batch of approximately 500ml, which is roughly 5 servings. Each serving contains 207 calories, 2g of fibre and 1g of protein. As you’d expect from an ice cream recipe, there isn’t a great deal going on in terms of vitamin and mineral content, but the strawberries do provide a third of your daily vitamin C per serving.

Vegan Strawberry Ice Cream Recipe

Vegan Strawberry Ice Cream Recipe
Ingredients
- ½ avocado
- 250 ml vegan double cream
- 200 g strawberries
- 2 tbsp strawberry jam heaped
Instructions

Add your strawberries, avocado and vegan cream to a blender and mix until smooth.

Setup your ice cream maker following manufactures instructions. Mine has to be turned on and already churning before you add your liquid.

Pour your prepared liquid into the ice cream maker, then add in the jam, which will then lightly swirl into the mix and combine with your prepared liquid mix.

Leave to churn following manufacturer’s instructions, I left mine for approximately 40 minutes. Then serve as a soft serve ice cream, or transfer into a freezer friendly container and freeze for slightly longer if you’d prefer a more solid scoop.
