I’m starting this month with this lemon curd recipe because you’re about to discover I went through a real lemon phase when prepping for this month and this recipe features as an ingredient in two recipes yet to come later this month. It’s also extremely easy, uses minimal ingredients and so versatile.

This easy vegan curd is the perfect combination of tart and sweet. It’s wonderful for spreading on pastries, or serving with muffins, waffles, scones, pancakes, adding to desserts or French Toast. Or for dolloping on non-dairy ice cream, adding it to vegan yogurt parfaits, spreading between the layers of a cake. This vegan lemon curd is a welcome dairy-free addition to any special occasion.

Ingredient Choices and Substitutions
You may find some other vegan lemon curd recipes that include turmeric. Yes, I know that sounds a little strange. But about an eighth of a tsp will give you a deeper yellow colour without the taste coming through. Personally, I’d rather make mine with vanilla soy milk and have it a little sweeter than run the risk of adding too much and accidentally making spiced lemon curd – but if you want to make your curd yellow, both are a good option.
How to store and does it keep?
Store in an airtight container/ jar and keep refrigerated and it will last up to a week.

Easy Vegan Lemon Curd
5 ingredients and 10 minutes to make. Serve with pastries, layer between cakes, or dollop onto non-dairy ice cream. Makes a great homemade gift, or simple breakfast for yourself!
This recipe is gluten free, dairy free and vegan. It can be nut and soy free depending on your choice of vegan milk.

Easy Vegan Lemon Curd
Ingredients
- ½ cup white sugar
- 1 tablespoon cornstarch
- ½ cup non-dairy milk such as soy or almond
- ¼ cup fresh lemon juice about 2 lemons
- 2 teaspoons lemon zest from about 1 lemon
Instructions

Now, in a small pot or small saucepan, whisk together the sugar and cornstarch. Mixing the sugar and cornstarch first will just help evenly distribute the cornstarch so that no lumps form. Now mix in the non-dairy milk, lemon juice, and lemon zest.

Put over medium heat, whisking frequently, until the curd thickens, about 5 minutes. You may need to whisk vigorously as it thickens to ensure a smooth curd.

Remove from heat and pour into a heat safe container to cool. Enjoy warm or store in the fridge for up to 1 week. It will thicken more as it cools.
