
I couldn’t do a month of soy recipes without an edamame something. And my first instinct was a salad. I love crispy roasted edamame in my salads, and I thought it would be a good option as it’s warming up a little. Now, this is somewhat Thai inspired, but I posted a more traditional Thai salad recipe last year with a peanut dressing, so I wanted to opt for something lighter. This orange edamame salad recipe has a lighter orange balsamic dressing to keep it lighter and fresher for the (upcoming) warmer weather. Â
As well as the lighter dressing, the only cooked ingredient in this recipe is the edamame, so it’s perfect for those who don’t like a hot and heavy dinner in warmer climates. But it still has a source of protein, healthy fats and carbohydrates so the dish is balanced overall, and should be enough to sustain you without being too heavy. Â

Between all of the micronutrients in the greens and the cashews, there’s a lot of goodness to unpack in this one. As it’s so nutrient dense, we’re doing this one in list form for the vitamins and minerals, but if you’re only interested in the macros, each serving of this recipe contains 24g of protein, 13g of fibre, and 31g of total fat, although a lot of that is healthy fat from the cashews, and 496 calories.

Orange Edamame Salad Recipe. Â
A quick and easy fresh salad recipe with crispy roasted edamame and a fresh orange and balsamic dressing. If you want to make this as a quick and easy, throw everything in a bowl at lunchtime option, you can pre-roast your edamame so everything is ready to go. I love roasted edamame as a snack, so you could roast a larger batch and keep some in a jar for snacking/ salads etc to make things easier.
This recipe is gluten free, dairy free and vegan. It does contain nuts and soy. Â

Edamame Orange Salad Recipe.
Ingredients
- 200 g spinach
- 50 g kale
- 2 cups edamame
- ½ tbsp sunflower oil
- Generous amount salt & pepper
- 1 large carrot grated
- 1 red pepper thinly sliced
- ½ cup cashews
- ½ orange
Dressing
- 2 tbsp balsamic
- 1 tbsp sesame oil
- Juice of ½ orange
Instructions

Preheat oven to 200°c, in a medium bowl, toss the edamame in the oil, salt and pepper until evenly coated. Once covered, place on a baking tray and roast uncovered for 15-20 minutes until it’s starting to crisp and turn brown around the edges.

I think the flavour is more even if you dress your greens before adding the remaining salad ingredients, so I like to mix my dressing, add half to the greens, then add the remaining ingredients and toss in the dressing again. But if you’d like as few steps as possible, you can skip the middle step and simply add your dressing at the end.

Mix your dressing ingredients in a small dish/ jug. Add your greens to a large bowl and toss with roughly half of the dressing.

Once the edamame is ready, add all of the remaining salad ingredients to the bowl along with the reaming dressing then toss again prior to serving.
Serve and enjoy!

So I have only had edamame a couple of times, and I don’t really remember if I liked it or not LOL However, this looks super yummy and I can totally do this kind of protein as meat based makes me want to hurl.
This salad looks so so good. I am really looking forward for the weather to get a bit warmer so I can get used to eating lots of salads again. Usually when it is really warm, a salad is pretty much all I can handle! An orange dressing sounds quite interesting as well. xx
