
I know Mexican bean burger recipes have been done to death and there’s nothing new about them at all. But, they’re staples on a vegan menu for a reason. A lot of meat eaters even opt for veggie burgers. These ones are easy to make, contain every day easy to source ingredients, nutrient packed and can easily be processed to hide vegetables from kids (or adults) and boost your nutrition. Â
Before we start, I want us to pretend that food shortages aren’t a thing right now (maybe they’re not by the time you’re seeing this) and imagine that these burgers in a bun served with a great looking side salad. Got the image in your head? Perfect, let’s start. Â
Mushroom Haters?
This recipe contains quite a high amount of chestnut mushrooms, which are one of the only plant foods naturally high in vitamin D. I know a lot of vegan recipes are mushroom heavy, and as someone who isn’t the biggest mushroom fan, this isn’t exactly ideal. But mixing them into a recipe like this is great because you get rid of that awful texture (sorry to any fans out there) but you still get the nutrition. Mushrooms also absorb flavour really well, so cooking the mushrooms with the spices first helps to get a rich even flavour in the burgers after they’ve been processed. Â
Nutritional InformationÂ
I’ll start with the vitamin D seeing how I’ve already made a point of telling you this recipe is a source of it. The full recipe makes three burgers, so per burger, this recipe provides 85% of the RDA of vitamin D. it also contains just over half of your daily vitamin A, a third of your daily vitamin C and at least 20% of vitamins B1, B2, B3, and B5. Each burger provides 8.5g of protein and 9.4g of fibre. Â

An easy vegan bean burger recipe packed with vitamins and minerals and a great source of fibre. Â
I’m sorry that this recipe serves three, I know it’s an awkward number. And I was hoping that it would be two large or four small when I was prepping them. But three makes the most perfectly sized burger patty and I had to stick with it – look.

This recipe is gluten free, dairy free, soy free, nut free and vegan. Â

Mexican Bean Burgers Recipe
Ingredients
- 150 g chestnut mushrooms high vitamin D, thinly sliced
- ½ red pepper roughly chopped
- 3 large cloves garlic roughly chopped
- 1 tsp sunflower oil
- 3 tbsp breadcrumbs
- 1 can black beans
- 1 tbsp tomato puree
- ¾ tbsp smoked paprika
- 2 tsp ground cumin
- ½ tsp chilli powder
- Black pepper to taste
Instructions

Preheat oven to 200°c

Heat a large frying pan on medium heat. Add the tsp of oil, or a few sprays of fry spray. Add the roughly chopped pepper, sliced mushrooms and garlic and cook for 2-3 minutes. Add the spices, stir to evenly coat the vegetables, then cook for a further 3-5 minutes until vegetables have softened and spices are fragrant.

Add the contents of the pan and all of the other remaining ingredients to a food processor and pulse until all of the ingredients are thoroughly combined but still have some texture. The mix should be slightly sticky but not overly wet. If it’s too wet, add some more breadcrumbs and pulse again. If you want to hide the vegetables, process until completely smooth.

Divide the mix into equal servings and shape into burgers with your hands. Place on a baking tray in the centre of the oven and cook for 30 minutes. They should be firm on the outside, softer in the centre and hot all the way through when they’re ready.

Black bean tacos are one of my new favourite foods and I love Mexican so I’m all over this recipe! I’m not the biggest fan of mushroom texture so it’s great that cooking them like this changes it!

I’ve never had a bean burger, or any type of veggie burger. Don’t know why, I imagine I’d like them. I love the veggie hot dogs at Ikea, are they similar?

Mmmm! I always like making my own patty. It really pushes the creativity out of you. I love mushrooms. They are delicious. I like that the burgers are easy to make and BIG PLUS when they stick together!! I wouldn’t mind having a vegan patty from time to time. Thanks for sharing!

I do love a bean burger, when I do go out to eat to pubs and restaurants I do often go for the bean burger. I am also a mushroom lover haha, I actually used to hate them growing up, and then my boyfriend made me try them again about a year ago and since then I’ve very much enjoyed them!

I love a bean burger! I get them all the time from Tesco, they’re delicious! I’d never consider making them myself though so this is a fab recipe!
I’m not a big mushroom or bean person, but love what you say about absorbing flavour. If it was super flavourful, I’m sure I wouldn’t even notice!
