
This is my final high protein recipe of the month, and I thought I’d keep this one simple. While the others have been heavier main meal kind of options, this salad could work as a main, lunch or a meal prep option. I know that salad isn’t exactly the first thing that comes to mind when you think of higher protein options, but that’s exactly why I’m including it. You’ll be amazed at how easily a couple of grams of this and that here and there add up to make a high protein salad.
Today’s salad is comprised of a few individual mini dishes to make a zesty bowl as the final product, but I’ve broken the recipe down by individual component to make it simpler if you want to mix and match in other dishes.

Protein Sources
In total, this salad contains 24.5g of protein without the optional ingredients, which add another 4g if included. All of the individual parts of this salad contain a protein source. There’s a lemon kale and quinoa salad, the quinoa is obviously a source but as a dark leafy green, the kale adds a little bit too. The dip is chickpea based, as are the falafels so there’s protein coming from the legumes (12g) and grains (7g) in this dish.

Nutritional Information
Aside from the 24-28g of protein, this dish provides the full RDA of vitamins A, C and K. it also contains 19g fibre, 40% of your daily omega 3 and over half of the RDA of folate and B6.
High Protein Vegan Salad Recipe
A high protein vegan salad recipe made up of lots of smaller protein containing dishes, easy to swap out, mix and match or use for meal prep.
This dish is gluten free, dairy free, soy free, vegan and can be nut free.

High Protein Vegan Salad Recipe
Ingredients
- 200 g kale
- 50 g rocket/ arugula
- 50 g chilli & lime cashews optional
Quinoa
- 200 g dry quinoa
- 600 ml vegetable stock
- Juice of 1 lemon
- Generous amount black pepper
Falafels
- 2 cans chickpeas drained and rinsed
- 1 large red onion roughly chopped
- 3 tbsp lentil flour
- 4 cloves of garlic roughly chopped
- 1 tsp chilli flakes
Dip
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 red pepper
- 1 can chickpeas drained and rinsed
Instructions
If making all of the components at the same time, preheat the oven, start prepping the quinoa. Then add the pepper to the oven. Start making the falafels and add put those in the oven after the pepper has been in approximately 10 minutes for everything to be ready at the same time.
Falafels

Preheat oven to 200°c. While the oven is preheating, add all of the falafel ingredients to a food processor and process on high until smooth. Remove the mix from the food processor and shape into 16 small balls.

Once up to temperature place in the centre of the oven for approximately 20 minutes until cooked, warm all the way through and slightly golden on the outside. Turn half way.
Quinoa

Rinse the quinoa before cooking. Add quinoa to a pan on a low heat and lightly toast for one minute. Add a generous amount of black pepper and then the stock. Cook uncovered for 15-20 minutes until the quinoa has cooked. Then remove from the heat and cover for 5-10 mii9nutes to lightly steam the quinoa. Use a fork to ‘fluff’ it after it has steamed. Stir in the lemon juice then toss with the kale before serving.

Add the cashews now, if using.
Dip

Preheat oven to 200°c, slice the pepper in half, lengthways and place on a baking tray with the outside facing upwards. Cook in the centre of the oven for 25 minutes until the pepper has softened and is starting to blacken around the edges.

Once the pepper is cooked, add to a processor with the remaining dip ingredients and pulse until smooth. You can also do this in a high speed blender although you may have to stop and stir a few times due to the lack of liquids.
Once all components are ready, serve and enjoy!

This sounds delicious, I’d have to leave the cashews out for allergy reasons but the rest of it would make a great lunch! I love falafel but never considered making my own, weirdly. It sounds so easy as well! Definitely feeling inspired to have a go now.

I haven’t tried lemon kale and quinoa salad. This sounds so tasty for lunch. The dip with chickpeas sounds perfect to go with the salad.
