You may remember seeing another baked oats recipe earlier this month. The intro said something about some recipes having all sorts of puddings/ fillings in them – well, this is one of them. I thought if I’m constantly adding yoghurt to my baked oats to make them creamier, surely a cheesecake baked oats recipe would be even creamier (& better). So, I had a play around with my baked oats recipes and created these chocolate cheesecake baked oats.

Nutritional Information
This recipe, including the optional ingredients, contains 21g of protein and 10g of fibre. Assuming you opt for fortified dairy alternatives, each serving contains 40% of the RDA of calcium (UK recommendations), just under 20% of the RDA of B12, and 17% of your daily vitamin D.
Substitutions
If you want to make these without the chocolate (why?) and make them plain vanilla cheesecake baked oats, you can, but you’ll need to add either some extra oats/ oat flour to make up for the lack of cocoa powder, or add something like powdered peanut butter to absorb the extra moisture.
To make it extra chocolatey, you can opt for a vegan chocolate milk and add extra chocolate chips to your batter.
For reference, I made mine with Nush cream cheese, Alpro Greek Style, vanilla soy milk and maple syrup as my sweetener.

How to store and does it keep?
This is a single serving recipe, best served fresh so storing and reheating isn’t recommended. You can eat this dish cold later the same day if you wish.
You can prep the batter in advance if you want to save a little time, but you’re probably going to need to add some extra vegan milk before baking to prevent this from becoming a cheesecake overnight oats recipe if you opt to make it in advance.
