

When I was making my Recipe A Day May post ideas list, I knew I wanted to make some sort of energy/ snack/ protein ball, but I was having a hard time choosing a flavour. Then I’m not sure what happened, but something seemed to make me suddenly obsessed with carrot cake and now here I am on February 29th and this is the third carrot cake recipe I have planned for the month of May. But the more I thought about the components of carrot cake, the more a carrot cake energy balls recipe sounded like a good idea. They already contain nuts and dried fruit which tend to be the base of most energy balls, so the flavours work really well adapted in this way.
As I was prepping these, I couldn’t help but think the mix would make a great cookie dough. Well, one thing lead to another and you’ll find out how that turned out in tomorrow’s recipe post. Not wanting to give too much away. So, all I’ll say for now is that if you find yourself with too much mix and you don’t think you’ll get through them quick enough, there’s an alternative option to bake them.
Nutritional Information
I made some of these as a basic energy ball, think Nakd bar style, and some with some added protein. The nutritional information is going to be for the original ones without the protein. But adding the protein will be an extra 10 calories and 2g of protein per ball.
Each ball is only 99 calories, contains 2g of fibre and 2.5g of protein (similar to a Nakd bar per 100g). The nuts and nut butter provide a quarter of your daily omega 3 and 15% of the RDA of omega 6. The carrots provide over 100% of your daily vitamin A and over a quarter of the retinol activity equivalent.

Carrot Cake Energy Balls Recipe
A healthy 99 calorie snack inspired by carrot cake flavours. These balls only take 5 minutes to prep and contain all natural ingredients.
When it comes to storing them, a cool cupboard is best. I put some in the fridge and they tasted a lot better at room temperature. A lot better. As they do contain fresh carrots, the cupboard will have to be cool and dry to ensure they stay fresh.
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts.

Carrot Cake Energy Balls Recipe
Ingredients
- 1 ½ cups grated carrot
- 1/3 cup oat flour
- 1/3 cup GF oats
- 1/3 cup cashew butter
- 1/3 raisins
- 1/3 cup walnuts
- 1 tsp cinnamon
- ½ TSP nutmeg
- 1 scoop vegan protein powder optional
Instructions

Add all ingredients other than the raisins to a food processor and mix until the wet and dry ingredients are fully combined. Add the raisins in and pulse a couple of times to combine but leave some texture. Alternatively, mix on high for a few further seconds to combine until smooth.

Take roughly 1 tbsp of mix and roll into a small ball in your hands until all the mix is gone. You should end up with roughly 12 energy balls.
Serve and enjoy!

Store in a cool dry place in an airtight container.

Sounds yummy! But I can’t find oat flour right now, everything is bought up in the shops. So frustrating! These would be good for me because I’m the sort that skips lunch. Unless I’m at work where I’m always starving lol
These are so simple to make, what a great healthy snack to have! I keep snacking on flapjacks at the moment which are definitely not as healthy. But I do love a snack bar that has cinnamon in it.

I used to love protein balls but I haven’t had them for ages. I’m going food shopping tomorrow so I’m going to pick up the ingredients to have a go myself because they look so tasty.

Ohhh, Vegan Carrot Cake Energy Balls Recipe. I love carrot cake and I enjoy a good energy snack during the middle of the day. This sounds so good with a cup of coffee.
