
This might seem a little late. We’ve all been talking about autumn recently. I’m done with summer. Alas, this series is dedicated to the seasons for a reason and it is still summer. I don’t know about you, but where I am it’s around 19/20 degrees this week, which is still warm enough for a little sorbet. This sorbet recipe will be my final one that’s fully summer themed. As we edge into autumn, my summer recipes will probably involve summer fruits baked into something that seems far more autumnal. Â
Sorbet is really easy to make. Easier than people probably think it is. The only difficulty is that it needs some attention even after it goes into the freezer, so it takes a long time. But, while we are still in summer and berries are still cheap, it’s a great affordable dessert option to make. This recipe only involves four ingredients, one of them is optional and one is water. The other two are fruit and sugar, very easy. Â
Seasonal Ingredients Â
I made mine with strawberries, but you could make this recipe with any other berry or cherries. British strawberry season is typically May to the end of September, spanning all of summer and late spring. I say typically as they have appeared on shelves earlier in recent years, but I’m not going to turn this into an essay about rising temperatures. Â
Strawberry Sorbet RecipeÂ
Earlier I mentioned an optional ingredient; that would be the lemon juice. The lemon juice is there as a preservative and is necessary if you’re making a big batch that you want to keep in the freezer for a while. If you’re making a smaller batch to serve over the next few days and make your sorbet with good quality fruit, you can skip the lemon juice. Â
This recipe is dairy free, gluten free, soy free, nut free and vegan friendly.Â

Strawberry Sorbet Recipe
Ingredients
- 250 g fresh strawberries hulled
- 100 g sugar
- ½ cup water
- Juice of 1 lemon
Instructions

Put the sugar and water in a saucepan over a low heat and stir until the sugar has dissolved. Raise the heat and simmer for 5 mins, or until the liquid has become a syrup. Set aside to cool.

Put the strawberries and lemon juice (if usinin a blender and blitz until smooth. You can also use a food processor. If using a food processor or if your blended mix contains seeds (this may be dependent on the fruit you opt for), strain through a fine sieve into a bowl and discard the seeds. Combine with the sugar syrup, mix until fully combined, then pour into freezer friendly container.

Freeze for an hour to 1 hr 30 mins, then whisk with a fork to break up any ice crystals that have formed and return to the freezer.

Keep mixing the sorbet once an hour for three to four hours to break up the ice crystals. Stop mixing when firm but scoopable.
Serve and enjoy!

Sorbet?? At only 94 cals?? I’m gonna try & make this over the weekend; it is boiling in California, and this sounds like such a yummy option to ice cream, frozen yogurt, which both have dairy and therefore my stomach don’t like. The ingredients are so simple as well! I had no idea that sorbet was so easy to make, and I want to tackle this recipe asap.
