
So, this recipe isn’t supposed to be going up today. Later this week I’m sharing a post with 10 vegan salad recipes, and this happens to be one of them. But, a pesky stomach bug got in the way of my planned recipe prep day for this week’s Strictly Seasonal and some improvisation was required. As it happens, most of the ingredients in this sweet nectarine salad are in season, so this week’s seasonal recipe was already good to go.Â
Seasonal IngredientsÂ
As we discussed earlier in the year, kale is a winter vegetable, so not exactly in season. However, peppers and nectarines are in season. Nectarines are in season late April to late August. Although, one variety of Chilean nectarines are in season from December to March, so check your labels for the origin! Despite being available all year, pepper season is actually quite short. They’re at their best July to September. Â
Nutritional InformationÂ
A lot of the vitamin intake from this recipe comes from the kale. This recipe contains 100% or more of the RDA of vitamins K, C, and A (80% retinol equivalent). It also contains high amounts of vitamins E, B6 and folate. This recipe (including the dressing) comes in at just under 440 calories a serving.Â
Sweet Nectarine Salad RecipeÂ
I wanted this recipe to be sweet, but also wanted some contrasting flavours, which is where the salt and pepper chickpeas come in. This salad is very easy to throw together as the roasted chickpeas are the only ingredient that needs cooking. I opted to serve this with a balsamic dressing with an orange twist, but you can easily simplify it to a basic balsamic vinaigrette if you want to keep it basic.Â
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts.Â


Sweet Nectarine Salad Recipe
Ingredients
- 1 can chickpeas drained and rinsed
- Tsp olive oil
- ¼ tsp salt
- Black pepper to taste
- 150 g kale
- 1 red pepper diced
- 1 nectarine chopped
- A small handful almonds
Dressing
- 2 tbsp balsamic vinegar
- 1 ½ tbsp olive oil
- 1 tbsp orange juice optional
Instructions

Preheat oven to 220°c. Coat the chickpeas in the olive oil and add the salt and pepper. Place chickpeas on a baking tray in the centre of the oven and leave for 20-25 minutes until golden and crispy.

Mix all of the dressing ingredients in a small dish/ bowl and stir to combine.

In a large bowl, add the kale and gently massage it. Then add the chopped nectarine and pepper. Drizzle the dressing over the fresh ingredients then transfer to plates or bowls to serve.

When the chickpeas are ready, add the chickpeas and almonds to the top of the bowls/ plates.
Serve and enjoy!

I love the look of this recipe ! I am yet to try fruits in salad – it seems to be an American thing to add apple..seems odd but won’t knock it until I’ve tried it.

this sounds SO yummy! nectarines are my favorite fruit. i’ve been trying to cut down on actual sweets that I eat, especially in the evening and nectarines have been so good for me to fulfill my sweet tooth while getting something healthy in. great recipe xx

I never knew Peppers had a short season, interesting , could explain why sometimes peppers are lovely and then other times..not so good. Paying much more attention now you’ve mentioned this recipe is full of lots of good vitamins! I love chickpeas and almonds so I think I have found my golden recipe of yours! Nothing I need to swap out!! I love fruit in my salads too, my mum always used to put grapes and apple in them when I was younger, so I think I would LOVE the orange twist! xx
