
I’m a big believer in sweet breakfasts being the correct way to start your day. Usually, my breakfast consists of something fruity or chocolatey. The most savoury option I’d choose is granola, which usually has syrup in… I’m not sure where the sudden desire to create a savoury breakfast muffins recipe came from, but I decided to make these gluten free caramelised onion and olive muffins. You can have them as a healthy, savoury breakfast muffin or simply a snack. Â
These muffins have some sweetness in them thanks to the caramelised onions and applesauce, but are overall a lower sugar option. They’re a much healthier alternative to your typical breakfast muffin, but they’re a great option if you need something to grab and go and don’t like overly sweet breakfasts (how?). Â
This recipe is calculated on six muffins per batch as my muffin tray* isn’t that deep. You may find that you only get four if yours are larger. As a little experiment, I decided to bake two of them without any greaseproof paper to see if they stuck/ cooked differently. They seemed to be slightly more well done on the top than the others. But that could also be a hotspot in my oven. But they did not stick to the muffin tray at all. So, if you don’t have any greaseproof paper or muffin cases to hand, this will still work.Â
Nutritional Information Â
Overall, these muffins don’t have a lot going on in the nutrition department because of the small amounts of each ingredient. But, thanks to the olives and the sunflower oil, they are omega rich. They contain 20% of the daily RDA of omega 6 and 25% of the RDA of omega 3. That’s a great morning boost of healthy fats at just 132 calories each.Â
GF Caramelised Onion & Olive Muffins RecipeÂ
This savoury breakfast muffins recipe is gluten free, dairy free, soy free and vegan. The almond milk is the only nut ingredient in this recipe. So, that could easily be subbed for another non-dairy milk to make them nut free, if required. Â


GF Caramelised Onion & Olive Muffins Recipe
Ingredients
- ½ small onion thinly sliced
- 30 ml maple syrup
- 30 ml balsamic vinegar
- 75 g GF oat flour
- 1 flax egg
- 1 tsp baking powder
- 1 tsp mixed Italian herbs
- 40 g green chilli olives sliced
- 1/3 cup applesauce
- 1 ½ tbsp sunflower oil
- ¼ cup almond milk
- ½ tsp bicarbonate of soda
- 1 tsp apple cider vinegar
Instructions

Preheat the oven to 180C and line a muffin tray with cases or greaseproof paper.

We're going to start by caramelising the onions. Add the sliced onion to a small saucepan on low heat and cook for 3-5 minutes until it starts to become tender. Add the maple syrup and balsamic vinegar and cook, covered, for approximately 15 minutes. The onions should be jammy with a small amount of liquid remaining at this point.

Mix the flax seed with water to make a flax egg and set aside.

While the onions are simmering, sift the oat flour and baking powder into a large bowl. Stir in the Italian herbs and olives with a touch of salt and pepper.

In a small bowl, mix the bicarbonate of soda and apple cider vinegar until it foams – this will help them to rise.

Add the bicarbonate mixture, milk, applesauce, oil and cooked onions to the bowl of dry ingredients. Gently fold the wet ingredients into the dry.

Divide the mixture between the muffin cases and place in the oven for 25-30 minutes, until golden and a knife comes out dry. Place on a cooling rack before serving.
Serve and enjoy!

I’ve tried savoury muffins and I just didn’t like them. My brain seemed not to want to accept that something that is normally sweet was now savoury. These muffins do look nice but I can’t eat onions due to stupid food intolerances. 🙂

Savoury has so become my thing over the last couple of years! Sugar is so addictive & terrible for us, so I decided to try and recalibrate (is that the right word? maybe, “realign” or something better idk) my tastebuds to prefer savoury to sweet. Now, I know swapping a bowl of ice cream for a bag of crisps isn’t the most healthy choice, but I’ve managed to come to prefer what is savoury as these last couple of years have unfolded. These sound so delish, & I’d definitely want to have them in the morning myself :’)
I never would have thought to have savoury muffins for breakfast but I really like the sound of these! I’m just not that inventive in the kitchen. Olives and onions together sound really yummy!

I’ve only tried cheesy muffins before and they’ve been a bit hit and miss. These do look lovely and it’s probably something Flora would try too as she’s an olive lover (yay). I have to confess I wouldn’t eat them for breakfast though, I’m a confirmed sweet tooth first thing in the morning! Lisa x
Oooh, I love that you added some sweetness to the muffins through caramelized onions. I would never think about using that to add some sweetness. Wow, the calorie count is low on the muffin! I like that the muffins are easy to make too. I never had savory muffins before but prefer them over sweet ones!

I am trying to think if I have had savoury muffins before, but I don’t think I have! I always go for the sweet stuff as well, blueberry muffin being one of my favourites! I am liking the sound of caramelised onion in a muffin though, not sure I’d have them for breakfast but would definitely be a lovely snack!
