Ingredient Choices and Substitutions
There’s plenty of room for flexibility with this recipe to adjust to your own palette. You can add extra vegetables, like courgette or aubergine to the tray. The beans can be swapped for butter beans for something more dense, or even chickpeas.
How to store and keep
Store any leftovers in an airtight container and keep refrigerated. You can reheat them either in the over or on the hob. In the oven, preheat to 175°c, add the gnocchi to an oven-friendly container, and bake for 10 minutes until warmed through. On the hob, you can reheat in a saucepan with a little or oil, stir often until hot again.

Mediterranean Vegetable Baked Gnocchi Recipe
Ingredients
- 1 packet gnocchi 400g
- 1 can cannellini beans drained and rinsed
- 1 pepper roughly chopped (red, orange or yellow)
- 220 g small vine tomatoes
- 1 red onion roughly chopped

- ½ tsp garlic powder
- Olive oil
- Black pepper
To serve
- 1 handful fresh basil chopped
- 1 ½ tbsp vegan parmesan
- Balsamic glaze
Instructions

Preheat oven to 205c, add all of the vegetable tray ingredients to a large baking tray along with the gnocchi and roughly toss to combine. Drizzle olive oil over the tray, then add the dried oregano, garlic powder and a generous amount of black pepper. Place in the oven for 25 minutes.

After 25 minutes, sprinkle fresh basil over the tray, and 1-2 tbsp of vegan parmesan, just enough to cover the top layer. Add more to taste if you would prefer more. Now drizzle the balsamic glaze over the tray (to taste), and you’re ready to serve. These final ingredients will naturally get combined as you divide the tray into bowls to serve.
