
Welcome to strawberries and cream season 2023! I’m kicking off this year’s Wimbledon series with this strawberry crunch bars recipe, which is so fun to make and great to make with kids. You can adapt this recipe however you want to put all of your favourite things in it, but all you essentially need is lots of crunchy delicious strawberry and vanilla flavoured snacks, some nuts for extra crunch, and a gooey strawberry layer to hold it all together.

I threw about as many ingredients as I could in these because I wanted to get the best experience in terms of mixed textures and flavours, but you can play around with the list, skip something and add a bit more of a few of your favourite things etc.

Ingredient Choices and Substitutions
As I said above, I filled mine with as many different types of biscuits and crunchy add ins as I could, to get the best variety of crunch and flavours in every bite, and you can customise yours to your own taste, but I thought I’d quickly run over the specific products I used in mine in case anyone wanted to follow the recipe to a tee.
Vegan Meringues – London Apron. You can get these in vanilla or raspberry, yes, unfortunately, the pink ones are raspberry rather than strawberry, but they do look cute with the pink ones in.
Jammy Wheels – Coop ones (free from aisle, not regular biscuit section) seemed to have a better crunch than the more expensive options from speciality free from brands. Save a little money and buy the store’s own versions.


How to store and does it keep?
You can keep these for up to a week, they need to be somewhere extremely cool, so they’re better off in the fridge if you’re making these in summer or live in a warmer climate, but a tub in the cupboard will do for an average British winter (or cooler).
Strawberry Crunch Bars Recipe
Chewy gooey strawberry vanilla bars of fun, add all of your favourite nuts, biscuits and more to get your favourite desired crunch.
This recipe is gluten free, dairy free and vegan friendly. Made as listed below, it does contain nuts and soy.

Strawberry Crunch Bars Recipe
Ingredients
- 125 g Free From Jammy Wheels
- 10 g Vegan Meringues
- 20 g flaked almonds
- 20 g macadamia nuts
- 30 g Strawberry Urban Fruit
- 120 g vegan white chocolate
- 50 g vegan butter
- 75 g strawberry jam
Instructions

Line a deep baking dish, like a brownie tin, with greaseproof paper. Crush some of your biscuits and meringues and place them in the dish along with the nuts, Urban Fruit and any other add ins you want to use.

In a small sauce pan, add your jam and cook on a low heat until it softens slightly and gets slightly runny, then add in the white chocolate and vegan butter until they’re both melted. Stir to thoroughly combine the three ingredients then pour over the dry ingredients. Make sure the liquid fully spreads to the edges of the baking paper to ensure all the smaller add ins are contained.

Place your dish in the fridge for at least an hour until the liquid has fully set, ideally longer, then slice into eight bars.
Serve and enjoy!
