

Any regular reader will know that tofu isn’t really my thing, but I saw some tofu nuggets recently and wondered if that would be more appealing than a regular block stir-fried or baked and decided to have a little experiment and ended up with this tofu fingers recipe.
I’d never tried anything like this before, so didn’t know what to expect, and I was pleasantly surprised by the results. I’m not a fully converted fan, but it was great to see what all the fuss is about. All of the store-bought ones near me are off limits as they all contain gluten, so it was great to come up with an option I could try. And if you are a fan of tofu/ tofu nuggets, you’re going to love this tofu fingers recipe.
You can eat them alone with a dip, as an appetiser, served with a salad, or add them to a wrap/ pitta and use them as a sandwich filler.

Nutritional Information
Per four tofu fingers, approximately a third of the recipe, you’ll get 1g of fibre and 11g of protein.
As for vitamins and minerals, each serving contains 40% of your daily calcium and 2.3mg of iron, 20% of your daily selenium, and 40% of your daily vitamin C.

Substitutions
I’m aware that tofu fingers are likely to be used as a substitute for fish fingers, and this spicier version isn’t the most child friendly recipe I’ve ever produced. If you do want to make these for children who don’t love spicy food, you can substitute the hot sauce for half a cup of dairy free milk and skip the chilli powder, or substitute it for a milder spice or herb.
How to store and reheat
You can prep them in breadcrumbs before cooking and keep them refrigerated for 4/5 days before cooking, but once they’ve been cooked, they don’t reheat well. They can be eaten cold for up to three days after cooking, providing they’re kept refrigerated.

Tofu Fingers Recipe
Ingredients
- ½ a large block of extra firm tofu 225g
- 1 tbsp teriyaki marinade
- 1 tsp chilli powder
- 1 tbsp sunflower oil
- 100 ml hot sauce
- 100 g GF breadcrumbs
Instructions

Preheat oven to 200°c.

Slice the tofu into rectangle ‘fingers’. You’ll should get about 12 strips in total.

Toss the sliced tofu in the teriyaki marinade and chilli powder

Heat a frying pan on medium heat, heat the oil then add the tofu and cook for roughly 2 minutes on one side, then flip and cook for 1-2 minutes on the other to seal in the seasoning.

Remove from the heat and transfer the tofu to a plate.

Dip in the hot sauce, then the breadcrumbs, ensuring the tofu is evenly covered.

Place on a baking tray and cook for 20 minutes.
