
Ice cream is something I struggle with. As a vegan that doesn’t eat coconut, my options are heavily limited anyway as a lot of them are coconut based. Some are soy based, but it gets a little boring eating the same ones on repeat. Then after finding out that I’m gluten intolerant and can no longer eat my favourite Ben & Jerry’s Peanut Butter Cookie, it was time to do something about it. So, I decided to make my own no churn vegan ice cream recipe and tried to figure out how to make this as creamy and delicious as I could make it.
I accidentally made this a peanut butter ice cream the first time I made it, but the original plan was to make a vanilla that I could add flavours to later. There are a few easy substitutes to make this a vanilla ice cream though so I’ll share both options down below for you to choose.
No Ice Cream Maker?
You can still do it. The only major negative about this one is that it involves a lot of ice cube trays, which is probably more than the average person has to hand. Maybe buy some bags if you’re wanting to try this! You can make this with smaller tupperware boxes instead of ice trays, but that version will result in a slightly different texture.
Nutritional Information
Obviously, ice cream isn’t the most nutritiously dense thing in the world. But as the creaminess of this comes from nut butter, it does have some nutritional benefit. It contains 3.5g protein per scoop and 10% of your daily vitamin E. If you opt for fortified milk, you’ll also get some B12, vitamin D and calcium in smaller amounts too.

No Churn Vegan Ice Cream Recipe
A creamy vanilla non-dairy ice cream recipe that’s easy to customise for each allergen.
This recipe is gluten free and vegan, it can be soy free and/ or nut free depending on your choice of ingredients.

No Churn Vegan Ice Cream Recipe
Ingredients
- 2 cups non-dairy milk of choice I used vanilla soy
- ½ cup peanut butter or alternative see notes
- 1/3 cup liquid sweetener I used maple syrup but you could use a sugar free alternative
- ¼ tsp salt
- ½ tbsp vanilla extract
Instructions

You have three options for making this at home without an ice cream maker

Whisk all ingredients together, pour into ice cube trays, and freeze. Let the ice cubes thaw enough for a food processor to be able to handle, then blend until smooth. Freeze for about an hour for a firmer ice cream.

Freeze a large, shallow container. Whisk ingredients together in a bowl, pour into the cold container, and freeze. After a half hour, stir the mixture very well to break up ice crystals, then re-freeze. Repeat this process every half hour for about 2-3 hours. Essentially, you’re doing the same work that an ice cream machine would do, whisking air into the mixture and breaking up ice crystals.

If you don’t have the option of using a larger shallow container and want to use a regular sized tupperware box, follow the same steps as option 2 and leave it to freeze. If you wish to mix it in a blender/ food processor, you’ll need to leave it to thaw for longer which will result in a soft serve texture rather than a firm scoop.

If you have an ice cream maker, follow manufacturer’s instructions.

Recipe Notes
This recipe as it is makes a batch where you can still taste the peanut butter. You can sub this for something more neutral in taste like sunflower seed butter, or cashew butter and up the vanilla to a full tbsp if you’d prefer a full vanilla flavour without the nutty taste. Alternatively, up the PB to a 2/3 of a cup for a stronger nut butter ice cream
If you can’t use nut butter for allergy reasons, you can make this using wow butter.

I’ve cream is one of my all time favourite snacks, I haven’t tried want vegan options of ice cream because it contains coconut which I really don’t like but I definitely need to try this out! X
This sounds delicious! I didn’t have much luck with my ice-cream maker when trying to make watermelon ice-cream. I think the liquid from the watermelon was just too much for it. This version sounds a lot easier than that…I will have to give it a go!

This. Looks. Amazing. In fact we do make our own ice cream sometimes but not vegan or gluten free. That said, I know Flora would LOVE this and the bonus is that it’s something she can make too.
