Obviously, this is a dressing, so the amount that you use will vary depending on what you’re opting to use it for, but I used this for a cauliflower dish for my 5 in 5 this month that served four, so the following information is based on four servings per recipe.
Each serving contains 107 calories, 1.2g of protein and 1g of fibre. Kale and lemons are both high in vitamin C, so each serving provides 45% of your daily vitamin C and over 100% of your daily vitamin K.
Ingredient Choices and Substitutions
Kale and lemon are obviously the main ingredients here and can’t really be swapped. In a pinch, you could swap the lemons for lime (obviously not the same flavours, but the citrus will balance everything else). I opted for walnut oil in this dish as it’s a great source of plant based omega 3, but if you need to avoid nuts, swap the walnut oil for olive oil instead.

How to store and keep
Transfer the dressing to an airtight container and keep refrigerated for up to four days.

This recipe is gluten free, dairy free, soy free and vegan friendly. It can be nut free if the walnut oil is swapped for olive oil.

Kale & Lemon Dressing Recipe
Ingredients
- Juice of 2 lemons
- 100 g kale washed
- 2 cloves of garlic
- 3 tbsp walnut oil
- 4 tbsp of water
- 10 g fresh basil or 1 tsp dried
Instructions

Add all ingredients to a blender, starting with just two tablespoons of water and blend. You may need less than stated in your ingredients list depending on how wet your kale is after it’s washed. Check the consistency and add more as required.
