Vegan chocolate French toast recipe

A vegan and gluten free alternative to the classic French toast, made with vegan egg replacer and chocolate for a more indulgent breakfast.

Ingredients

  • 60 ml Oggs egg replacer or aquafaba
  • 40 ml chocolate soy milk
  • 20 ml vegan double cream I used Elmlea Plant
  • 1 tsp vanilla extract
  • ½ tbsp cocoa powder
  • 2 thick slices GF bread
  • 1 tbsp vegan butter
  • Icing sugar chopped nuts and berries to serve (optional)

Instructions

  1. Whisk together the vegan egg replacer, milk, cream, vanilla and cocoa powder. Lay the bread slices in a single layer in a shallow dish and pour the liquid mixture over them. Allow to soak for 2-3 mins, then carefully turn over and soak for 2 mins more.
  2. Heat the vegan butter in a non-stick frying pan over a medium heat until foaming. Carefully lift 2 slices of the soaked bread out of the dish and add to the frying pan. Fry for 3 mins on each side, until golden and crisp, then place on a plate, ready to serve. Add any toppings you wish.
