Omega 3 Stove Top Granola Recipe

An easy small batch granola recipe you can throw together quickly, providing several sources of omega 3 and healthy fats for a healthy high fibre breakfast option.

Ingredients

  • ✘ 1 cup rolled oats use certified gluten free oats if gluten free
  • ✘ 1/4 cup chopped walnuts
  • ✘ 1/4 cup pumpkin seeds
  • ✘ 1/3 cup raisins
  • ✘ 1 tbsp walnut oil
  • ✘ 1 tsp vanilla extract
  • ✘ 1/4 tsp cinnamon optional
  • ✘1/4-1/2 tsp salt
  • ✘ 1 tbsp date syrup
  • ✘ 1 tbsp chia seeds

TOPPINGS:

  • ✘ fresh/frozen fruit of your choice
  • ✘ plant milk

Instructions

  1. In a non-stick pan over medium heat, add 1 cup rolled oats. Toss for 3-5 minutes until oats are slightly toasted and fragrant.
  2. Add walnuts, pumpkin seeds, vanilla and salt. Stir until everything is well combined. Toss for another 3 minutes.
  3. Turn the heat down to low and add the oil and date syrup. Toss until everything is well coated. Cook while stirring continuously until the syrup has dried out (approx. 3-5 minutes).
  4. Remove from heat, and add raisins and chia seeds. Serve with fresh fruit and a splash of plant milk, or some vegan yoghurt
  5. Store extras in an air tight container for up to 1 month if making a larger serving.
