Healthy Chocolate Pancakes Recipe

Ingredients

  • ½ an avocado
  • 1 cup chocolate soy milk
  • 1 scant cup GF oats
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • 1 vegan egg I used Free & Easy egg replacer
  • 1 tbsp brown sugar optional - I didn’t use this
  • Oil to fry in if necessary for your pan

Instructions

  1. Add the oats to a blender and mix until a fine flour forms. Then add the cocoa, avocado and chocolate milk and blend until a thick, smooth batter forms. This mix will be thick (drop style pancakes), don’t worry if it isn’t runny.
  2. Once blended, stir in the baking powder and egg replacer until smooth. Heat a non-stick frying pan on a low to medium heat. Once hot, drop about a sixth of the mixture in the pan and cook for 3-4 minutes, flip and cook for the same amount of time on the other side. Repeat until you’re out of mix.
  3. Add toppings of your choice before serving.

Serve and enjoy!

Recipe Notes

To top mine I simply added some frozen dark berries to a small saucepan and left to simmer while I prepped the pancakes to make a thick fruit sauce. Then drizzled with a small amount of maple syrup before serving.
