Gluten Free Vegan Cherry Scones Recipe

An ‘all butter’ vegan cherry scone recipe that tastes so soft and buttery no one will know it’s free from.

Ingredients

  • 1 cup 120g Gluten Free Self Raising Flour
  • ½ cup GF oat flour 50g
  • ¼ tsp Salt
  • 1 tsp Baking Powder
  • ¼ cup 55g Vegan Butter/Margarine
  • 2 Tbsp Caster Sugar
  • 3/8 cup 90ml vanilla soy milk
  • 1 tbsp lemon juice
  • 100 g glace cherries

Instructions

  1. Preheat the oven to 220°C
  2. Sift the flour into a mixing bowl and add salt and baking powder.
  3. Add the vegan butter and rub in with your fingers until the mix is crumbly.
  4. Add the caster sugar.
  5. Then add the soy milk, vanilla extract and lemon juice and mix in with a spoon.
  6. If the dough is too sticky at any point, add more flour. The perfect texture is a tiny bit sticky, so you get a little on your hands but still very easy to shape and be easy enough to move around on a clean surface.
  7. Use your hands to shape the dough into little balls and then flatten the top and bottom – makes around 4 scones
  8. Bake in the oven for around 20 minutes until browned and an inserted skewer comes out clean
  9. Leave to cool slightly before slicing in half to eat
