GF Vegan Chocolate Orange Loaf Recipe

A delicious festive flavoured bake. The perfect indulgent snack for the run up to Christmas.

Ingredients

  • ¾ cup GF oat flour
  • ¼ cup GF bread flour or GF self raising flour
  • ¼ cup cacao powder
  • 1 cup light brown sugar
  • ¼ TSP salt
  • 1 tsp bicarbonate of soda
  • 2 tsps orange extract
  • 1 tbsp apple cider vinegar
  • ¾ cup soy milk
  • ¼ cup sunflower oil
  • 2 tbsp candied orange peel
  • 3 tbsp dark chocolate chips

Icing

  • 1 tbsp vegan butter
  • 80 g vegan orange chocolate

Instructions

  1. Preheat the oven to 180°F (350°C). Line a loaf tin with greaseproof paper.
  2. Sift both flours and cocoa powder into a mixing bowl and add the sugar, baking soda and salt and mix in.
  3. Add in the soy milk, oil, and vinegar until well combined and no large lumps remain (tiny lumps are okay). Stir in the candied orange peel and chocolate chips
  4. Pour the batter in the lined loaf tin, place the tin in the oven and bake for 45-50 minutes until a toothpick comes out clean.
  5. Let the loaf cool for a few minutes before removing from the tin and placing on a cooling rack to cool completely before frosting.
  6. When the loaf has cooled frost the loaf.

Icing

  1. Melt the vegan chocolate in a glass bowl over a pan of boiling water. When the chocolate is 80% melted, add the vegan butter, stir to combine and remove from the heat when both the chocolate and the vegan butter have melted.
  2. Pour the mix over the loaf, using a spoon to spread it if necessary. Leave somewhere cool for the icing to set before serving.
