¼cupvegan butter
¼cupnut butter I used almond
½cupgolden caster sugar
1tsporange extract
1tbspvegan milk of choice preferably something sweetened
1cupoat flour
75gvegan white chocolate chips
Extra decoration
10gvegan white chocolate
Orange food colouring
10gvegan dark chocolate
Instructions
Mix your butters and sugar in a food processor until thoroughly combined and smooth. Add in the milk, orange extract (if using) and continue to mix. Slowly add in the flour, bit by bit, until combined and smooth.
Roll into balls to freeze as cookie dough chunks. Press two of the cookie dough balls together, being careful not to squash them, and they should freeze as a whole snowman Leave in the freezer for at least 30 minutes before eating, if using the frozen option. Melt your vegan chocolate. Roll your frozen chunks in the melted chocolate then return to the freezer for another 60 minutes to set.
Once fully set, melt your dark chocolate and use this to decorate your snowman’s eyes and buttons. You can do this either by dipping a fork in your melted chocolate and using that to place the dots on your snowman. Or for more precision, you can use a toothpick or a needle/ pin. Now melt your white chocolate. Add a few drops of orange food colouring and use a fork to combine them. As the chocolate starts to thicken ever so slightly, take a small amount of chocolate on a fork and place it where you want your snowman’s nose to be. Swirl your fork upwards as you pull it away to create the carrot shape. The snowmen should be cold enough from the freezer that these decorative details set instantly.
