Peanut Butter Popcorn Balls Recipe

Creamy, melt in the mouth chocolate peanut butter balls with a light nutty popcorn crunch.

Ingredients

  • 200 g melted chocolate
  • 2 tbsp chocolate peanut butter or2tbsp peanut butter and 1 tsp cocoa powder
  • 30 g peanut popcorn
  • 1 tbsp melted butter

Smooth:

  • As above but you’ll only need 20g of popcorn, and chop/ crush it first.
  • Plus 15 extra chocolate chips yes, 15, not 15g

Instructions

  1. Melt your chocolate in a heatproof bowl over a pan of boiling water. When the chocolate is about 90% melted, add in the vegan butter and peanut butter to combine and melt together.
  2. If making the smooth balls, stir in your crushed popcorn, then pour the mix into the cake pop tray evenly to the line.
  3. Leave the tray in the fridge to set. They cool quickly when they hit the silicone so this should only take 10-15 minutes.
  4. Once set, pop out of the silicone trays. melt the chocolate chips and drop a little on half of them, then place them on top of one another to form a ball. Place back in the fridge to set again.
  5. For the less neat clusters, simply stir the whole popcorn into the Chocolate peanut butter mix and then place a heaped tsp in the cake pop trays. Place in the fridge to set, pop out when ready to serve.
