Olive Salsa Recipe

Olive salsa loaded with fresh ingredients - chillies, red onion, tomatoes, peppers and pine nuts topped with a smoky Middle Eastern inspired dressing is so delicious to eat even alone. Serve with crackers for a light snack or add it to your next mezze board.

Ingredients

Dressing

  • cup olive oil
  • 1 tbsp balsamic glaze
  • ½ tsp sweet paprika
  • ½ tsp smoked paprika
  • 1 tsp ground cumin

Fresh Produce

  • 1 cup green olives
  • ½ small red onion diced
  • 1 cup chopped vine tomatoes
  • 1 green chilli chopped
  • 1 medium red pepper chopped
  • ¼ cup pine nuts

Instructions

  1. Chop all your produce then mix in a large bowl to combine
  2. Add all dressing ingredients to small dish and whisk with a fork to fully combine.
  3. Pour the dressing over the chopped produce and toss/ stir thoroughly once again ensuring the vegetables are well mixed and evenly coated.
  4. Stie in the pine nuts.
