Ingredients
1tspsunflower oil
1large red oniondiced
1medium red pepperdiced
1tbspharissa seasoning
½tspsmoked sweet paprika
Pinchof cinnamonor to taste
Generous amount of salt and pepper
4clovesgarlicroughly chopped
100mlvegan double cream
5tbsptomato puree
100gspinach
1can white beansdrained and rinsed (see ingredient choices)
Instructions
Heat a large frying pan to medium heat. Add the sunflower oil once the pan is hot, then add the onion. Cook for 2-3 minutes, then add the pepper and cook for a further 2-3 minutes before adding the seasoning and spices. Stir in all spices and the garlic and cook for one further minute.
Now add the vegan cream and tomato puree. Stir to combine and continue to stir frequently for 2-3 minutes until the sauce has evenly coated the vegetables. Don’t worry if your sauce looks like it’s thickening slightly too much, the water content from the spinach should correct the consistency.
Add the spinach and beans. Stir constantly until the spinach has fully wilted then leave for the final few minutes to warm the beans through, stirring occasionally. If your sauce looks like it’s getting too thick, add a further tbsp of vegan cream or a tbsp of unsweetened vegan milk. The ideal final texture is thick and creamy but not runny.
